Tucked into East Long Beach, Coffee Parlor— often dubbed “COPA”—has long embodied something increasingly rare in coffee culture: a place where the coffee matters as much as the food. And, even more, where neither feels like an afterthought. Chef and founder Josh Knight—who also owns the equally stellar Pizza Parlor next door—built the space around a simple frustration: having to bounce between multiple places to get a quality cup of coffee, a proper pastry, and a satisfying breakfast. Instead, he set out to create an all-in-one neighborhood ritual, one rooted in scratch-made food, hospitality, and craftsmanship. Years later, that philosophy has transformed Coffee Parlor from a neighborhood café into one of East Long Beach’s most beloved morning institutions.

The coffee remains the heartbeat of the operation. Whether it’s a carefully pulled espresso drink, a seasonal specialty, or a straightforward cup brewed with precision, Coffee Parlor has built a reputation around consistency and care. But it’s the supporting cast that keeps regulars returning. Fresh baked goods emerge from the kitchen daily, pastries and breads carrying the same from-scratch mentality Knight has long championed. Coffee shops often excel at one thing and outsource the rest; Coffee Parlor instead leans into being chef-, baker-, and barista-driven, creating a menu where every component feels intentionally crafted rather than merely assembled.

Then there is the breakfast burrito—arguably among the city’s very best. Long Beach has no shortage of breakfast burrito contenders, but Coffee Parlor's The OG is a stand-out. It is certainly vying for the best breakfast burrito in the city. Made with El Majorado flour tortillas, this monster is stuffed with over-easy eggs. Mishima Reserve Wagyu beef tallow fried tots. (Yes, you read that right.) Tillamook sharp cheddar. Nueskes bacon. Jalapeño Nueskes bacon onion bacon jam. Avocado. And all with a morita tomatillo salsa on the side.
